Thanks to everyone who responded to help with this question.

The majority of responders agreed that gluten needs to be washed and
rinsed off of any surface that comes in contact with food or mouths.
Gluten cannot be burned away. One person commented that it isn't alive
and would be hard to "kill". =) Most responded that bleach is not
necessary, and of course is bad for us anyway. Thanks to those of you
who said that it's ok to be "paranoid" - When looking through the
archives, I found so many emails of folks who said that they do not
worry about eating out, I guess everyone has their own level of
sensitivity and comfort. There are folks who reported getting sick from
grills and people who have never gotten sick from grills - people who
have gotten sick from dishes and those who haven't, although most
haven't.

A few people thought that burning would change the structure of the
protein, but many others disagreed, and there was no scientific
consensus.

Most also agreed that dishes are not as much of a problem as
cross-contamination in the case of restaurants or friends' homes, as
long as you cannot see food particles on them (in which case they are
suspect anyway). And that grills must be really cleaned well, not just
burned off.

So, looks like gluten cannot be "killed" but must be washed, scraped,
rinsed, scrubbed, etc. away. Anything porous cannot be cleaned well, so
better not to use it.

A good suggestion for the grill is to use foil or a rack on top of the
grill. As for dishes, there are always paper plates when concerned.

Hope that this helps the folks who were wondering the same thing - I can
add details if anyone is interested in more, please email me.

Emily
