I just wonder if different fats (saturated, poly, mono) differ as far as
digestibility goes.In other words are saturated fats harder to digest than
let's say mono or vice versa.

As I remember Steffanson and some other authors claimed that saturated fat
is the cleanest fuel so it also should be the easiest to digest ?
I couldn't find any studies on this subject
My only personal observation is that if I eat predominately saturated fats I
feel kind of stronger and more stable but it's very subjective.
