AFter years of following a glutenfree diet, I have learned that I
can usually always trust a lettuce salad...no croutons.  Don't be
afraid to ask about breading, to request dressings on the side, and
to send back anything that comes with a surprise (i.e., gravy when
nothing was mentioned in the menu).  Tell them that you have a very
bad wheat allergy.  That will usually suffice.
