Well, something has to explain why some people have symptoms only some of
the time, even when they are eating gluten.  Apparently, they used to say
that you were in remission if your symptoms went away while you were still
eating gluten, and since the overt symptoms were all that they were worried
about, they said it was fine to get back on gluten (with the warning that
you needed to be followed for lymphoma risk).
 
This is certainly an area that needs exploring, don't you think?
