Triticum monococcum wheat is also called "Einkorn wheat" and "small spelt" 
(NOT to be confused with common spelt.)  For the curious and the daring, 
here is more information on bread making and nutrition.  The flour is 
available as a gourmet item in the UK and Europe and from at least one 
Canadian supplier.  Try it at your own risk.
