<<Disclaimer: Verify this information before applying it to your situation.>>

I apologzie for taking so long to summarize. I would first like to thank everyone who has responded. This is truly a great resource.

I should first clarify by letting you all know that I think I am still being glutened based on my symptoms. I have not had any repeat endoscopies since October 2009, nor have I had any repeat blood work done. I didn't know that I should. Maybe I need to find a new doctor? I probably should also find another nutritionist. The one I met with wasn't able to provide me with any information that I didn't already know.

Anyway, my symptoms consist mostly of bloating and tons of hiccups. Yes, I think this is odd. While I do not have diarrhea, I certainly do not have normal bowels. They are often very large and look as though they have been squeezed out of a tube of toothpaste. Sorry if that's too graphic, but I thought I should be very specific.

Some people who have replied to my email have confirmed my suspicion that it takes time for the stomach to heal and that perhaps I am just looking to feel better NOW. My household is not GF, unfortunately, but I go to great lengths to keep my food GF. My husband, who does the majority of the cooking is very sensitive to my needs and makes sure he keeps everything separate. I also prepare my food for the following day after I have made the kids lunches and wash my hands and the counter.

Some people who have replied to my email have said that it's hard to say where my unknown gluten is coming from without knowing what I eat. Here's a brief overview of my meals.

Breakfast - eggs, fruit, Stoneyfield plain yogurt, GF granola, or cream of buckwheat made with skim milk
Lunch - Boar's Head turkey on GF bread with avocados, GF sandwich wrap with homemade hummus and fresh veggies, tuna
Snacks - Mary's crackers, Glutino pretzels
Dinner - brown rice, chicken, fresh steamed veggies

I did get one response stating that Swanson's chicken broth is not really GF as I was lead to believe by Cambpell's webstie. I had been eating soup that I made with this chicken broth and sure enough I felt very bloated afteward. I have since cut out the soup, but am still feeling bloated at times.

Again, I thank everyone who responded to my cry for help. I know that my situation is not unique and that there are others out there who are going through the same thing as me or have done it already in the past. As my father always says, "Time and patience."

Sarah
