Hi~
Vitamin cottage (vitamincottage.com) is a good choice for gluten free
foods, probably smaller than Whole Foods, but also usually cheaper.
They have locations throughout CO, you can check at their website. Wild
Oats (wildoats.com) is another store that will carry GF products.
The Denver celiac chapter (http://www.geocities.com/csadenver17/) has a
good listing of restaurants in Denver, Boulder, and Ft. Collins that can
do GF. If you do decide to go through Fort Collins, let me know--I live
there and can give you more specifics if you need.

Can't help you with the West slope, but can tell you a bit about Denver
and the Springs. Denver's got Maggiano's little Italy (one downtown and
one in the Tech Center which is south Denver) which does a fabulous GF
menu. The sous-chef comes out and tells you what they can do for you.
It's pricey but oh-so good. Be sure to share food as they give you
enough for six people in one dish! There are also two PF Changs that
have GF menus. We also have several Vitamin Cottages, The Wild Oats and
as you mention, Whole Foods.
On your way to the Springs, just south of Denver, at the Castle Pines
Parkway exit, exit to the right and turn left into a Safeway shopping
center where you'll see a 'Water To Go' Store. They have several racks
of GF items and some frozen items as well. I just discovered that one.
Then in Colorado Springs, there is a fabulous GF bakery called "Out of
the Breadbox" which has tons of goodies. They have a website with
location and store hours. "Jane Asphaug"
I have over 100 GF restaurant menus that I've collected. I have them posted on a website I maintain called SillyYaks. You can preview the site by going to: www.groups.yahoo.com/group/SillyYaks and then click on the "Join this group" button. You do need to have (or obtain) a Yahoo! ID and password to get access to the site. I have all the restaurant menus posted under the "FILES" section. SillyYaks members get automatic montly updates on which new menus have been added or updated. You should check it out.
