Thank you for the many responses to my question re distillation.  I
received over 35 replies!  Many of you feel that the CSA has outdated
information re distillation, and therefore they continue to err on the
side of caution and tell us to avoid white vinegar and alcohol. I
received 6 responses from persons in the science or food industry who
feel distillation does remove all gluten.  The main concern of most of
you is that the distillation process may be rushed, and therefore not
complete, leaving trace amounts of gluten.  The Canadian Celiac Assoc.
does allow alcohol distilled from grain.  Does anyone on the CSA have an
answer for me?

The bottom line seems to be that none of the reference organizations we
look to has the current research,and tells us to avoid alcohol, despite
the chemists telling us it is gluten free.  It is therefore left up to
the individual.  No one who replied to me reacts to alcohol.  No, I have
not tried any yet.


The other part of my question was about the vinegar in Heina ketchup  -
it is apparently distilled from corn or wood, so it is gluten free.
