Heat 10 ounces of spinach in microwave for 2 1/2 minutes.  Strain off
excess water.

Mix together:
4 or 5 eggs
3 ounces crumbled goat cheese (or 1 cup grated cheddar)
1 tablespoon chopped green onion tops
2 tablespoons chopped green peppers (optional)
1/4 teaspoon salt
spinach

Preheat oven to 350.  Heat enough olive oil in a flame proof skillet to
completely coat the bottom.  Cook over medium heat for 5 minutes.  Put in
oven for about five minutes just until eggs are "set."  Serves 2 to 4
depending on what size servings people want.  (This recipe was adapted
from the South Beach Diet book.  My hubby's on that diet & the recipes
are fabulous & mostly gluten free.)
