Dear Fellow Listers:

A couple of weeks ago I mentioned a recipe for "The Ultimate Flourless
Chocolate Cake," using only 3 ingredients, in the March-April 1998 issue of
Cook's Illustrated magazine. Since then, I have been inundated with
requests to post the recipe to the list.

I must respectfully decline for several reasons. The recipe is long and
complicated and would involve not only a lot of typing, but would exclude
the sidebar and other parts of the article which are really part of the
whole process.

You would also miss other articles and recipes in this issue which are
appropriate for our special diets.

And finally, there may be some copyright issues.

As alternatives, and to support the efforts of this excellent magazine
which accepts no advertising, you can:

1. see if you can buy a copy ($4); you will not find it at corner
newstands, but check bookstares that carry magazines, or stores that
specialize in cook- and bakeware. In my area, both Barnes & Noble and
Borders Books carry Cook's Illustrated; check Encore Books as well, or
whatever is appropriate for your area.

2. order a copy direct, at $5.00, at 800-611-0759.

3. check their website:

<http://www.cooksillustrated.com>

where they post selected recipes from past issues. The recipes from this
current issue have not yet been posted. I have already written them a
letter requesting that this particular recipe be included, and if it is I
will check and let the lsit know. I have also asked them to be aware of our
diets and interest as they prepare future issues. Without financial
support, such magazines will not last and we will all be the poorer for it.

Sorry to disappoint, and hope you will all understand.

John on Long Island
