The practical answer is that Cold Pressed Olive Oil is considered most healthy
by all the various conflicting dietary theories, is the least processed, has the
least toxins created by heating, and has the least saturated fats and the least
poly-unsaturated fats.

Coconut Oil is also unaffected by heating, but there seems to be a problem
getting it from a source that is assured of not letting it sit around for
months/years, unless you buy it from one of those fanatical, but mega-expensive
sources like Omegaflo in Canada.

Of course, Coconut Oil is verboten to those who follow the conventional societal
wisdom, but is generally well thought of in Paleo circles...

If you want a theoretical or physiological answer, please let us know.
