Well, it's the drawback of the American neolithic peoples that the only
cereal they had is corn/maize. Leading to pellagra and to generall cell
energy supply problems.
Near east/Europe/Asian cultures are more lucky as the species cultivated
there show a better niacin availability plus a higher tryptophan content.
In addition they found sesame, which is extremely high in tryptophan
content. Niacin iss an issue only for traditional american people.
