According to the CFIA (Canadian Food Inspection Agency), use cooked egg
whites within 4 days.

The FDA recommends use of cooked eggs stored in the refrigerator within 1
week.

These guidelines are likely based more on food quality than food safety
concerns because virtually all pathogens appreciably stop growing below 4C
(40F).
