Hi Erryn,

To be safe I'd get her to a doctor. Have her blood glucose checked. Make
sure she is drinking plenty of fluids, especially water (between meals).

Add back some grains, like brown rice, to see if that relieves the symptoms.
If it does, I strongly suggest a slower transition of altering the food
portions. Rather than excluding items, reduce them slowly for a "fade away"
effect.

If this doesn't help, then she has some obvious medical issues that need to
be resolved for her to do this diet. That should involve your doctor and/or
nutritionist.
