I always get organic bananas now after having had some apparently
tainted non-organic ones.  The other poster mentions letting them ripen
until they start turning brown.   I also tend to get that "pang" you
mention when I try eating green bananas (unmistakable taste of
chalkiness too that disappears when ripe).  I find that plantains are
easier for me to handle and they don't have to be over-ripe either.
