It's no different than drying anything else. If it is still in the sac the
whole sack can be dried. Faster results if you slit one side and open up
the sac and thus flatten it out.

If you have roe that is out of the sack (or jarred) know that it has
probably been processed to some degree and probably doesn't need to be
dried.
