I buy Applegate Farms salami at our local Vitamin Cottage.  This is a
product of Canada.
The pork is antibiotic-free.  It has pork, sea salt, dextrose (yes
that's a sugar), spices,
wine, lactic acid starter, garlic. No nitrites or other stuff.  It is
very good, not sweet tasting.
An ounce contains 8 gr protein, 7 gr fat, 0 gr carbs (which means less
than 1 gram).
Needs refrigeration.

Wellshire Farms has a turkey snack stick, doesn't need refrigeration,
contains
turkey, turkey skin, spices, sea salt, raw sugar, water, lactic acid
starter.  Pretty salty.
Has 1 gram carbs per stick, plus 3 gr fat, 5 gr protein.
