*Most* email programs allow you to specify whether or
not to include the original message in your reply. If
you choose no, then you can simply copy the part of
the message you wish to respond to and paste that in
the message body of your reply. If you don't have a
choice, then just do the last part and copy that which
you wish to respond to and paste it in a new message.
Or do as someone else suggested and summarize. I know
that when I see all that extra message, I usually just
delete, even if it is from family/friends. Forwarded
messages get the same treatment (delete).
