Todd,
Thanks so much for your informative reply. The weird thing is that
I've
replaced a lot of saturated fat in my diet ie cutting out dairy,
eating
sardines almost every day. One other thought -- I wonder if deviation
from
this way of eating can result in wildly fluctuating blood results. I
tend to
be very strict paleo most of the time, but the past couple of months,
I have
deviated due to stress from getting laid off. (I know, excuses,
excuses!)
Anyway, if one is strict say for a few weeks, then goes off the wagon
drastically, then gets strict again and has a blood test -- could the
deviations cause an extraordinary jump in total and ldl cholesteral?
The
reason I doubt this theory is because the triglycerides dropped --- a
good
thing.
