< Does anyone have information on the nutritional value of cartilage? Is
much of it absorbed in human digestion - or does it go through our systems
pretty much intact?>

my own experience with lamb shank is my chondromalacia patella has improved.
but i have to eat it 2-3 times a week to keep it under control.

so i guess the body can use the tendenuous material quite well.
