Bison meat is incredibly lean when compared to conventional meats. Here are
the total fat comparisons for various meats...

Conventional ground beef: 15-30% fat (30% fat ground beef splatters lots of
hot oil on you and burns if you fry it)
Grass-fed ground beef: 15% fat
Ground bison: 4-10% fat (no noticeable hot oil splatter and doesn't burn
easily if you fry it--mostly water comes out and your kitchen stays clean;
grilling and other cooking methods are presumably healthier)

Based on 100 grams of cooked lean meat:

If you just want to sample it, it's available at most (but not all)
supermarkets in New England and Florida. It's in the
"organic/specialty/game" meat sections. I'm going to be buying it in a 10
lb. bulk package from a food distributor soon (I know someone who works for
one) at about half the supermarket price.

Bison has a very slightly gamey flavor, but I got used to it fairly quickly
and now love it. I now prefer somewhat gamey meats like bison and venison
(probably my favorite meat so far) to commercial meats. Moose and bear are
still a bit too gamey for my taste (but quite edible).
