A short soak in some salted water and a little lemon juice seems to do the
trick.  Of course, broiling with a good smoked bacon works wonders, but
some would argue that isnt strictly paleo.  I find kidney has a milder
flavor than liver if that is an issue.  Also, pork kidneys seem to be
plentiful and imo, are not as strong tasting as beef.
