This week I received an excellent resource material that is appropriate for
beginners as well as those more experienced who wish to use soy products as
a replacement/substitute for dairy products.

The publication is the "U.S. 1997 Soy Foods Directory" published by the
Indiana Soybean Development Council, 423 W South St, Lebanon, IN 46052-2461,
(317)482-4376 voice, (317)482-0992 fax, or e-mail: <[log in to unmask]>.  You
can request a copy of the directory at no charge by contacting them
directly.  There is no mention made regarding international requests for
this information--so I assume that they will also mail this to any of you
who live outside the U.S.  All of the companies listed are within the U.S.
If you prefer to access the information, but not have another "tree" laying
around the home the same info is also available from their web site:

What can you find in this year's directory? There is very general
information about nutrition, information/uses of all the various forms of
soy products/derivatives available, a list of all of the companies who
manufacture each kind of soy products, contact info/description of each
company, resource list, soy cookbook list, and even a few recipes. Enjoy! :-)
