A friend who was getting her PhD in food science once told me that frozen
veggies, which are frozen soon after harvesting, are more nutritious
than many "fresh" veggies that have been sitting around in shipping and
in the grocery store for days or longer.  Of course, canned and jarred
veggies
are the worst of all.   The best veggies are the fresh-picked, picked-ripe
kinds from farms that are conscientious about renewing the nutrients in
the soil.  Unfortunately, these are more expensive and harder to find.
