Silken tofu plus some lemon juice probably could replace cottage cheese in
a recipe. There is a product called Vitamite which can be bought in
granular form. It is a non-dairy milk substitute. I have used soy milk with
added lemon to curdle it a bit in place of buttermilk. These days I'm
starting to use silken tofu though. It adds a great texture. Some muffins
that call for yoghurt have turned out beautifully when I used tofu instead
of soy milk.
