never tried these, but from vegan cookbooks:
#1: potato soup base, 3 med potatoes peeled/diced, 2 cups chicken bouillon or stock. bring all to boil, simmer 25 min, then put it in blender. (sounds pretty boring)

#3: potato & carrot: 1 lb cube white potatoes, 1/2 lb finely chopped carrots, 2 cups vegetable broth, 3 cups water, 1tbsp vegan bacon bits. bring all to boil, then cook covered over medium heat for 25 min.

...& toffutti has a new sliced pseudo american cheese that seems to actually melt!
