Off GFCFDiet list:
The following is a recipe I found in Karyn Seroussi's book "Unraveling the
Mystery of Autism" for yogurt.

YOGURT

3/4 cup DariFree powder
1 cup unsweetened pineapple juice
1/4 cup lemon juice
2 cups hot water
1/2 cup water mixed with 1/2 cup tapioca starch

In a large, microwave safe bowl, heat the pineapple juice until hot (not
boiling) and stir in DariFree powder until dissolved.  Add 2 cups hot water
and lemon juice.  Stir in the last 1/2 cup of water mixed with the tapioca
starch.  It may thicken up immediately as you stir, depending on the type of
tapioca starch and the temperature of the mixture.

If not, microwave for a few more minutes, stirring every 20-30 seconds to
check consistency.  The mixture should be creamy, and about as thick as a
milkshake, but not as thick as chilled pudding.  When it feels about right,
pour into a storage container with a tight fitting lid and refrigerate 24
hours before serving with a couple of spoonfuls of fruit spread.  If eating
too soon it may be gummy.
