Bronwyn,

     I use Earth Balance Natural Buttery Spread.  It is U Parve, non-GMO,
100%Vegan, 100% Expeller-Pressed Oils (I am guessing that this means
non-hydrogenated).  It works well for me, but, then again I have not baked
anything since I switched over to it.  It is relatively cheap, about $2.59
(US dollars) for 16 oz.
