Hello No-Milk Folks ,

   We have had a new dairy ingredient come to our attention. It's called
"ready sponge" and is used as a preservative in bakery items. If you
recall, whey contains both lactose and milk proteins so both lactose
intolerant persons and those allergic to milk proteins should not digest
"ready sponge". The New Jersey baker whose bread we first found it in is
helping us researching it. If any of you can help we would greatly
appreciate the assistance. We will let you know what we find out by
January.
