It's gingerbread house making time.  I'd like to make some cookie houses
with my allergic daughter, but I'm having trouble finding all the
substitutions that I need.  I found a cookie recipe with no eggs and I
can use shortening for the butter.  The problem is the icing.  Normally,
one uses royal icing which is powdered sugar and egg whites.  We can't
use either (the powdered sugar bc of the corn starch).  Does anyone have
an icing recipe that would set up the way royal icing does??  Has anyone
tried to use EnerG Egg Replacer for this?  One place on the box it says
you can't whip it, but another place says you can whip it to stiff peaks.
 I may wind up using just a sugar glaze and not being able to keep/store
them.

Now, to find candies and stuff to put on that don't have corn syrup!  I
may tint some coconut and cheerios and rice chex!

We already made a batch of gingerbread cookies and just used the colored
sugar sprinkles, but I went to a house making party last night and we
can't eat any of it :-(  The cookie houses (just flat fronts) would be a
great classroom project BTW.  The gal that hosted the party is a chef and
is doing this with an underprivileged  preschool class in a couple of
weeks.
