An excellent book is Super Immunity for Kids by Dr. Leo Galland.  It deals with nearly all of the common childhood allergies, starting from pregnancy through diets for older children.  It also has a lot of great kid-friendly recipes that, not only are they tailored for any kind of allergy, your kids will actually like them!
