Thanks for responses.  I also found some ideas
on the archives:

1.  Many suggested flax seed ground with water or applesauce.
     I have asked for the recipe from one of the respondents.

2.  Others provided recipes for trifle without using cake - but using
     biscuits or coconut macaroons - will email to anyone who requests.

3.  Others provided recipes for cake - some using silken tofu, others using
     oil which is claimed is easy and fail safe. - again can forward.

4.  Others asked for my great sponge cake recipe and I have
     passed that on.

I haven't tried all of these ideas yet but have tried one I found on
some archives which suggested using maple syrup to replace the eggs
and sugar - the quantity to use is about half the amount of sugar.

I tried this method in my butter cake recipe.  It produced a lovely tasting
cake - a bit like biscotti - but mine didn't rise.  Think I'll use it
anyway and see what happens.  The next cake I'll try is the crazy cake -
I'll report on its success.
