The manufacturers of olestra warn that the fat substitute should be
avoided by anyone with digestive problems. In recent tests, theater
goers( not necessarily celiacs) were given potato chips containing
olestra. Half reported abdominal pains . Surprisingly another group was
given chips with "real" fat and half of them reported abdominal
problems.

Which suggests that reaction to olestra or fat is a matter of
sensitivity.
