Thanks to all who responded to my request for help for my upcoming European trip.  Most agreed that Italy will be easier than Austria.  I did contact a woman from Salzburg that sent me several attachments of restaurants, menu items and lists of health food stores.  Contact me if you would like to receive that attachment.  Below is a list of other comments.  I will report back after the trip.

I was able to get quite a bit of information from the website of the Coeliac Society of Italy 
and they have an English version as well as an on-line pamphlet for tourists. 
Austria has a website as well. I know I searched for Reformhaus in Austria 
and found several in Salzburg. In Germany and Austria the health food stores 
that have gluten-free foods are called "Reformhaus". 

 I packed lots of Lundbery Brown (unsalted) Rice Cakes.  Continental breakfasts (rolls and cheese, jelly) were provided. I topped them w/ jelly or cheese, or crumbled them up & added milk for cereal (think shredded wheat).  I also carried a stash of instant rice & Quaker Instant grits.

German:

Gluten-Intoleranz

Dies bedeutet daß ich es nicht vertrage, etwas zu essen oder zu trinken, 
das Weizen, Gerste, Roggen oder Hafer enthält, z.B. Mehl, Schrot, 
Weckmel,Saucen mit Mehl und Panierung. Ich wäre Ihnen dankbar, wenn Sie 
dies beachten könnten.

And here is a Italian translation for eating out in restaurants:

Siccome non posso digerire proteine di cereali (segale, grano (frumento), 
orzo, avena) i miei piatti non devono contenere la minima quantita di 
farina, pane grattugiato, semolino, pasta, ecc. Qualora il piatto sezionato 
contenga uno degli ingredienti menzionati a cui non puo essere rununciato, 
La prego di propormi un altro piatto. Grazie

(in English) Since I suffer from an inabilityy to digest cereal derived 
proteins (rye, wheat, barley, oats, spelt), I cannot eat dishes containing 
flour, breadcrumbs, semolina, pasta, etc. Should any of these ingredients 
be used in the chosen meal and it is not possible to leave them out, please 
could you offer an alternative dish.  Thank you very much.

In Munich, near the MarienPlatz there is a health food store. This store is
also near the outdoors Farmer's Market that is well known near the
MarienPlatz.

In Germany and Austria you often find wurst stands on the
streets that serve the sausages with fries and a little fork - no bread!
Our German celiac friends assured us the wursts are gf and we ate them a lot
without trouble.
