If you are having difficulty maintaining your weight and muscles, maybe my
experiences will be helpful. But, I'm an engineer, not a doctor, so
please maintain a healthy skepticism.

I am celiac and hypoglycemic with Asperger's syndrome, allergies, other
sensitivities, and a tendency toward auto-immune responses. Back before I
began the GF diet I had dropped to 144 lbs (I'm 6'1" tall), my muscles
were wasting away, and my tendons were shortening, despite good exercise.

I succeeded bringing my weight back up to 154 lbs by consuming a cup of
honey each day, in small amounts to minimize the effect on my
hypoglycemia. But I was still so weak that walking more than a few blocks
was still an ordeal.

One of my doctors noted that I was not absorbing fats, indeed oils give me
arthitis-like symptoms. It occurred to me that if I was not absorbing
fats, I was probably not absorbing the fat-soluble vitamins. So I went
down to the health food store and bought vitamins A, D, E, and K in
*water-soluble* form. They can be purchased gluten-free. I began taking
2-3 times the RDA of each (I doubt I am absorbing even 50% of what I
take), and suddenly that feeling of being very fragile disappeared and I
began to slowly put on muscle. I believe it was the vitamin D that made
the big difference.

I have been on the GF diet now for several months and my ability to add
muscle is increasing. The feeling of muscles on my back and legs is quite
unusual to me and I am enjoying it, I had given up ever being strong
again.

So the messages are:
1) honey works far better than other carbs for maintaining weight,
2) vitamins A, D, E, and K in *water-soluble* form are essential in your
diet, especially for muscle-building.

BEWARE: Continuously taking more than 3 times the RDA of vitamins A and D
can be TOXIC as they build up in your fatty tissue. I am down to 2 times
the RDA, and will soon be cutting that in half on a trial basis.
