Hi Listmates,

I got this from a celiac friend and it sounds so wonderful I thought I would share it.

Grape Rice Dressing

3/4 cup long grain white rice
1/4 cup wild rice
2 Tbs olive oil
3/4 pound bulk pork sausage
1 cup chopped onion
1 cup sliced mushrooms
2 cups chicken broth
1/2 tsp fennel, crushed
2 cups seedless grapes
3/4 tsp grated orange peel

Brown white and wild rice in oil and set aside.
Brown sausage and onion in skillet and drain excess fat.
Stir in mushrooms, broth, rice and fennel.  Cover and simmer 25 minutes or until rice is cooked and liquid is absorbed.
Stir in grapes and orange peel and cook 2 minutes or until grapes are thoroughly heated.
Serves 6
