There's a fabulous chocolate in San Francisco called
"Scharffen-berger."  It's really yummy and is known
for it's gourmet attention to ingredients and process.


I emailed them asking if their chocolate is GF and
they said yes, it's GF!  Below is the message I sent
to them and their reply.  So, dig in!

PS to the Scharffen-berger people:  I was mistaken,
this listerve acually serves over 3,000 people, not
2,000 like I thought.

production team just to make sure, and as I suspected,
there is no gluten in our chocolate.

Hello,

My name is Craig and I love your chocolate.  I do need
to check something,however, as I've been diagnosed
with Celiac Disease.  This is a
condition in which I cannot consume gluten.  I have
severe reactions to foods that contain gluten. If I
avoid gluten, no problems at all.

> Rye
> Barley
> Oats
> Millet
>
> And their derivatives.  These may be contained in:
> Carmel color
> Dextrins
> Emulsifiers
> Extracts w/grain alcohol
> Flavorings w/grain alcohol
> Malt
> Modified food starch

I must also be concerned with food preparation.  For
example, some companies apply a layer of flour to
conveyor lines to prevent their food  product from
sticking to the conveyor.

Also, I need to be know if your lines make other
products that might have gluten; there's a fear of
cross-contamination.

Thank you so much for your time in this matter.  I
will be happy to send your response to a listserve
with over 2,000 members who all have the
same condition.  I'd be happy to lay on them how yummy
your product is. . .  :)
