"Is This Your Child?" by Doris Rapp, M.D. deals with food allergies,
many recommend this.
Good for offering substitutes, Carol Fenster's cookbooks especially
"Special diet solutions", recommended by many.
"The Allergy Self-help Cookbook" by Marjorie Hurt Jones
"Cooking 4 your Blood Type" by Dr. D`Adamo

There is a GFCFKids  (gluten-free, casein(dairy)-free) list at
www.onelist.com -- I have found it helpful especially in dealing with
children.

I found this extremely helpful to find the hidden corn items which are
in almost EveryThing!  Even EnerG egg replacer has corn in it. (Thanks
Rosalie, I did NOT know that.)

Miss Robens at 800-891-0083 has a lot of products we can use.

kosher foods for Passover does not contain corn.

Substitutions:       corn flour  : potato flour
                     cornstarch  : arrowroot or tapioca flour
                     garfava (bean) flour for baking and coating
                     baking powder  : Featherweight brand or
                                        1/4 c baking soda + 1/2 c cream
                                        of tartar + 1/4 c potato starch
                     xanthum gum (from corn)  : guar gum
                     powdered sugar (has cornstarch)  : grind from
                                        regular sugar
