I've not seen much about new Cyrex Labs testing, but here's my experience.  I was gold-standard dx w/celiac Jan 06, Marsh Stage III.  I am strictly gf and have had one "glutening" from a restaurant meal (spices on shrimp).  Prior to my diagnosis I did not have stomach pains.  After I was glutened once, I knew what everyone was talking about re: stomach pain, plus I had to run to the bathroom, had malaise for a week or 10 days.  

I didn't realize my body pains were really fibromyalgia, and maybe some osteoarthritis.  It took a heart attack last year for me to finally give up dairy.  You see, unknown to me, dairy was causing a delayed response with depression/lack of energy.  I tried running a 5K, and I believe I had an imbalance of minerals (ie too much calcium not enough magnesium) including dehydration (I was so tired I thought taking a hot bath would help - I was actually having the heart attack in the tub the night before I went to the ER).  Why bring this up?  Well, I must've read something, I quit the dairy, and my daily fibro pains in my legs were gone in 3 days.  I still have pain when I jog (excess lactic acid doesn't go away).  I have tried jogging for 5 yrs with this.  My belief is intestinal permeability has a lot to do with overcoming fibromyalgia.  A lot of my pain diminished when I gave up gluten.  For the past two years I've been mostly Paleo w/occasional gf grains (granolas mostly).  I hadn't given up dairy all the way, thinking casein a culprit, so I kept butter on occasion.

I did a lactulose-mannitol urine leaky gut test: postive.  I took out most dairy for 6 mos. & redid the test: better, but still positive.  I continued eating butter & some gf granolas and took the Cyrex Array 2 Intestinal Permeability:  positive (getting gluten somewhere!).  I was able then to order their Array 4 for Cross-Reactive Foods using the original blood sample.  I was reacting to quinoa (don't eat it), equivocal to buckwheat (in some granolas I ate), BARLEY!?, and "milk buyrophilin" which I believe is dairy fat (I eat it).   I did not have gut pains.

Within a fews days of Cyrex testing, I also got a Metametrix stool analysis "2100 Gastrointestinal Function Profile" in which I tested positive for anti-gliadin sIgA.

I found the barley:  Garden of Life Primal Defense Probiotic, which is marked gluten-free despite having barley and oat GRASS.  I talked to Jordan Rubin himself when he was in town, and he said it tests 20ppm or less.  That was last year.  I usually use other probiotics, but I forgot and would take a few of his in between bottles.  When I got my recent lab results and realized my error, I called the company and the rep reiterated the 20ppm test.  I believe it's ELISA testing, but I'm not sure.  Mr. Rubin did not believe in GIG's gf symbol program (I tried to mention) as he thought it a rubber stamp routine like the "Kosher" symbol.   

My point is to recognize that 20ppm can be damaging to the gut.  I am not consoled with a GF symbol on packages anymore.  While I realize I used a product which is obviously glutenous and suspect, there are others who might do the same, so I share.  I would appreciate hearing of others' experiences.
