To answer your question Gluten is the name for naturally occurring
proteins found in the seed of
cereal grains such as wheat, barley, oats, and rye.  Any food item that
contains flour or bran from one of these grains can be assumed to
contain
gluten.  Generally the use of flour is evident in the food product as in
baked goods (bread, bagels, pastries, pizza), cereal (granola, Cream of
Wheat), or pasta (macaroni, spaghetti).  Sometimes, however, wheat can
be
used as a thickener in foods such as gravies, sauces, or marinades.

The items in the Hardee's menu that are gluten-free are beef patties,
cheese, ham, roast beef (no au jus sauce), chocolate, vanilla and
strawberry milkshakes and soft drinks. Our fries are made with rice
flour
but are cooked in the same fryer as the hash rounds which are made with
wheat flour. If someone is highly allergic, they should not eat the
fries.
