A while back I asked listmembers to share easy to make GF foods to
expand my GF food list~ not a whole lot of responses, but I'll post them
just the same:

1.  Cheese melted on rice cakes, in the toaster set for light toast.  Tastes
great, the cheese keeps rice cakes from crumbling so easy, with my travel
coffee cup its every day's breakfast in the car.  2.  Throw a can of pinto
beans into the blender or food processor with a little oil and/or water
and/or lemon juice or rice vinegar and chili powder to taste, real quick
spread for anything, I spread on corn tortillas, and if I have time I put
slices of pepper, onion, tomato, cheese on top, into the toaster oven to melt
the cheese .  3.  Minute rice, 3 minutes in the micro wave, add ketsup and
cut up veggies like tomato, cuke, or melt frozen string beans or peas or
broccoli.  4.  Cooked rice, frozen peas, microwave til hot, stir in pieces of
ham or chicken.

Try brown rice pasta (I can get it in the bulk department of my supermarket),
Del Monte's diced frest cut tomatoes with spices (basil, oregano, and garlic
is good), and throw in any leftover meat that is too small

I keep some cooked rice in the refrigerator (half white half brown).  In the
morning I chop an apple into it and microwave on high for 4 minutes.  (I
drizzle a little water over the top of the rice first.  It helps resteam the
rice and makes it nice).  Then add some sunflower seeds.

One 16 0z bag of frozen" Lady Lee Stir Fry Cantonese Style Vegetables" from
Lucky Market Ingredients:  Precooked Rice, Broccoli, Carrots, Chinese Pea
Pods, Cut whole Baby Corn, Red Peppers and water Chestnuts.  1/2 LB frozen
uncooked shelled shrimp from Price Costco.  (Cortesa brand it's farm raised
and not dowsed with chemicals).  In a frying pan, with a tablespoon olive oil
and a clove of garlic heat up the frozen vegetables on high heat.  10 minutes
In a second frying pan with olive oil some garlic and Cajun's choice Creole
seasoning, Quickly Stir-Fry the defrosted ( under running cold water) shrimp.
4 minutes.  combine all on a plate and it is ready to eat.

I throw dried fruit into batches of rice.  I put the dried fruit in while the
water is coming to a boil.  I serve it hot with the meal and then I serve it
as a cereal cold or as part of a cold salad and I have used it as adessert
with a topping of fresh fruit or cream.  One pot or rice goes a long way.

Quick Bean Salad:
Large can of Kidney beans
can of green beans
can of garbonzo beans
finely chopped onion red/white or yellow (to taste)
marinate with Good Seasons Italian dressing (the kind you make)
chill & serve

Leftover Rice:
A few cups of leftover rice
Saute rice with spices, garlic (or onion), leftover chicken or  tofu or
   turkey or beef
Sweet Red pepper (looks like a green  bell pepper, only red) cut of tops
Stuff the pepper with the sauted spiced rice
Put in a steamer on medium heat for about 20 minutes
Serve with GF tamari (soy) & nutritional yeast.

Way simple:
Red Garnet Yam
Microwave like a potato (on potato setting) only a little longer.
Yum!
