Thanks for all your responses.  Most people said that maltodextrin used in U.S products must come from a GF source (corn, potato, rice) or be labeled otherwise.  Therefore, if it says just "maltodextrin" on the ingredient list, the product should be OK.  One or two people, though, said they always avoid maltodextrin b/c sometimes it could contain gluten and they aren't willing to chance it.  Products from other countries could use maltodextrin from wheat.  The Terra chips, though, are a U.S. product.  Chances are, they have simply updated their label in accordance with the new laws.  One person also said that even wheat-based maltodextrin could be gluten free (such a small amount in it, I guess?).  In any case, what I take away from this is that you should be able to eat maltodextrin in U.S. products as long as the label doesn't say it's from wheat.  (p.s. to the poster who asked where I read maltodextrin is GF: it was in Gluten-Free Living magazine, I beleive).
