Summary 2: Reintroducing dairy after one year
11.  Yogurt with live cultures. (Yoplait and unflavored Dannon have live cultures.)  Live cultures will add good bacteria which will digest other lactose products, thus making dairy products easier to break down.  May experience gas or bloating or even diarrhea for a while when restarting yogurt.  This will be from live cultures clashing with bad flora.  It will pass and you will find you are able to digest some other dairy products much better even though you are lactose intolerant if yogurt is high quality and has enough live cultures.  This person is still lactose intolerant, however when eats yogurt high in live cultures twice a day can eat a bowl of ice cream or some cheeses without taking lactaid and digest it well.  Any more cannot tolerate, but the good bacteria in yogurt will break down that much lactose for this person.
12.  Extremely dairy intolerant 4 years ago and even with a taste got migraines and heartburn.  Got sick on goat yogurt.
Skipped dairy for a full year, then reintroduced butter and did pretty well. Butter is well tolerated because it has very little protein or lactose.  A year later reintroduced goat milk kefir.  That is the mildest and most easy to digest dairy food available.  Kefir has the benefit of containing a beneficial bacteria, lactobacillus paracasei which is known to reduce food allergies.  It boosts the immune system.  Significantly improved this persons tolerance to all sorts of foods that used to really tear this person up. Can now eat many foods that would make her very ill before drinking kefir.  Occasionally you may meet someone who cannot tolerate it.  May have Herxhiemer reaction when first start using it- Look it up on the web to find out what it is and what to expect.
13.  Read somewhere that sharp cheddar cheese doesn't have casein.  (Not sure why that would be but has no problem with extra sharp Tillamook cheddar cheese.)
