Several people sent me information.

Peru’s
diet is corn based and one person just said she couldn’t eat wheat and didn’t
have any problems.  Quinoa is used a lot
there.

Another person used her restaurant card.  She didn’t speak Spanish and had GF meals
safely.

 

I emailed Inkazula Restaurant,Ciccicolina Restaurant, Baco’s
Restaurant in Cuzco
and they can prepare GF meals.

 

The hotel at Machu Pichhu makes safe GF meals.

 

I used Trip Advisor and got a list of restaurants and
emailed some from that list.
