There was a blurb on NPR that someone sent to me:

Why are so many Americans interested in eating gluten-free?  My theory is that there are many Americans who don't feel well and are looking for nonmedical ways to feel better.  Also, people who are avoiding GMO foods are avoiding wheat and one way to do this is to eat gluten-free.

This feels like a turning point to me.
