I was pleasantly surprised to find that many companies are already
implementing the new food labeling laws. There were not a lot of
responses, so I can best summarize simply by including quotes from those
responses below.

I have been doing quite a bit of calling lately and
have run into many companies that are already
referring me to the labels for complete information.
Interestingly enough, while only wheat for celiac
concerns has to be listed as one of the top
allergens, many companies are voluntarily listing any
of the other celiac concerning grains as well (!).

Here's the list of companies referring me to their
labels:

Betty Crocker, Blue Bunny, Campbells, Cascadian Farms,
ConAgra Healthy Choice, Farley's, General Mills,
Hershey's, Hunt's, Kraft, Lawry's, Libby's, Liptons,
M&M Mars, McCormick, Nabisco, Nestle, Pilsbury, Post, Progresso,
Russell Stover, Tyson, Unilever, VanCamps, Whitehall Robbins

A number of companies have incorporated the new labeling. For example,
Classico Pasta Sauce lists 'Allergens: Soy' on the ingredient label on
several of its jarred sauces. About 50% of US companies were already
labeling for the top 8 allergens before the law went into effect.

A specific format for the label has not been established, although
companies will likely have several options for meeting the laws
requirements. Ensuring that any derivatives are stated in the common
name Semolin (wheat); or as is done on the Classico sauces.
