This isn't a real intro, since I've posted before, but here goes anyway.

My name is Pat. I am an insulin dependent diabetic and was diagnosed with
Celiac Sprue at the end of March. I am on a low protein, low fat, high
carbo diet. I was diagnosed because my doctor was trying to figure out why
I was severely anemic.

My dietician has maintained the same proportions of foods on my diet, so
I'm getting bored with what few complex carbos I'm allowed. I've been
eating lots of Indian food, both at restaurants and frozen entrees (for
lunch). If you can find them, you might want to try Taj Gourmet frozen
entrees as a convenience food. The vegetarian entrees I've found are all
gluten free. (Not so for the meat dishes.)

My cholesterol has been low (104-130) ever since I was placed on the low
fat diet for diabetes. My doctors have been thrilled, although I adjusted
my fats a little when it hit 104... Now I'm concerned that the nice low
numbers were a side-effect of the Celiac Sprue. Any data on that? Will my
cholesterol bounce up now that my small intestine is working again? I'm
expecting some small bounce up just because my dietician added fats to my
diet. I'd prefer to keep it down.
