Thank you to all of you who answered my initial posting.  What a wonderful,
supportive group you are!  I will be answering you all one at a time, but I
wanted to broadcast this response.

One of the reasons I asked about oats is that there are so many wonderful
wheat-free cereals that are appealing to the kids, but they are made from
oats.  I am lucky to have a Whole Foods nearby, and have found enough
products to get us started - I will be doing a lot of baking in the future!
(one bite of the rice bread was enough to start me assembling the baking
stuffs)

Will has been surviving on pb&j sandwiches on rice bread, chips of all
kinds, fruit and yogurt.  Today marks the end of the first week.  A big
change from crackers and juice, which was the extent of his diet for about 5
months.  Yesterday he asked for cheese - a nice change back to an old
favorite which vanished from his choice list about 6 months ago.  I am
keeping  a journal to note changes, and the one concrete change I have
noticed is his sense of humor has returned - he is instigating games with
his brothers that he knows will bring a response.  We had already seen an
enormous change in personality when we eliminated citrus a month ago.

Thank you again for all your input - we got the autism diagnosis on May 30,
and the Celiac diagnosis on July 3.  It has been an interesting six weeks -
and your support means the world to me.
