slice muscles lenghtwise (up to 1 cm thick), put it in a dryer where the
temperature stay below105f , store in glass jar.
simple and better tasting than any premarinated jerky ,and healthier (no
soya, sugar , or salt)
a variant is to dry slices in the fridge (hanging) very tasty ( more like
the best dry sausages i used to found in France) it even have the taste of
what i was attributing to the salt and pepper in thoses " saucissons".
the quality of the beef is primordial (grass fed only) commercial beef leave
an unpleasant after taste, in my mouth.
There is no need to get fancy when natural is best.
