I love chocolate, too.  I've found, though, that it is much more
stimulating to me than coffee.  If I eat too much chocolate in a day, or
eat any within a few hours before bedtime, I won't sleep.  While I still
sneak a bit of it now and then as a treat, I found that my cravings for
concentrated carbs, including chocolate, all went away when I got enough
protein and fat.  The kind of fat is important, too. I think the
chocolate craving is a certain kind of saturated fat craving, as much as
the fancy alkaloids and concentrated carbs.  Another thing that
definitely influences my sleep is mineral intake.  If' I have trouble
sleeping, I make myself a big stew of bone-in meat and collard greens or
other high calcium and magnesium veggies.

IMHO, lay off the chocolate (and coffee) , try a big meal of ribs and
greens -- YMMV, but, I'd sleep and not crave anything.
